জলযোগ স্টাইলে সবজির রেসিপি | Special Mix Veg Recipe | Jolojog Style Mix Sabzi

Ingredients

  • 500 gm ‏Seasonal mixed vegetables
  • 1 tsp ‏Special spices mix (Panch foron)
  • 2 pcs ‏Bay leaves
  • 2 pcs ‏Cardamom
  • 3 pcs ‏Cinnamon
  • 3 pcs ‏Green chili
  • 4 pcs ‏Dried red chili
  • 1/2 tsp ‏Cumin powder
  • 1/2 tsp ‏Turmeric powder
  • 1/2 tso ‏Ginger paste
  • 1 tsp ‏Sugar
  • 1/2 tbsp ‏Corn flower
  • 3 tbsp ‏Vegetable/Soybean oil
  • To taste ‏Salt

 

Directions:

1You can choose any kinds of seasonal vegetables for this recipe. Here I took potato, aubergine, pointed gourd and pumpkin. Cut vegetables into small pieces, wash and drain well.

2Heat some oil in a pan on medium-low flame. Add bay leaves, cinnamon, cardamom, dried red chilies, green chilies and specially mixed spices “Panch foron” and fry them till brown. But do not over-burn, otherwise the curry will taste bitter. Then add vegetables and salt. Mix and cook for 5-7 minutes covered with the lid. No need to add water in this stage. The water released from vegetables helps in cooking.



3Add cumin powder, turmeric powder and ginger paste. Stir for a minute to remove the raw smell of spices. Then add 3 cups of water and cover with the lid. Cook on medium-high flame. After a while add sugar as per your taste when some water is reduced and the veggies are cooked.

4Take corn flower in a bowl and add normal water and mix. Then add this gradually in the curry to thicken the curry. Keep stirring while adding corn flour. Cook for another minute and your curry is ready to be served warm with luchi (Bhature/deep fried bread) or paratha.

উপকরণ

  • ১ চা চামচ ‏পাচ ফোড়ন
  • ২ টি ‏এলাচ
  • ৩ টুকরা ‏দারুচিনি
  • ৩ টি ‏কাচা মরিচ
  • ৪ টি ‏শুকনো মরিচ
  • ১/২ চা চামচ ‏জিরা গুড়া
  • ১/২ চা চামচ ‏হলুদ গুড়া
  • ১/২ চা চামচ ‏আদা বাটা
  • ২ টি ‏তেজ পাতা
  • ১ চা চামচ ‏চিনি
  • ১/২ টেবিল চামচ ‏কর্ণ ফ্লাওয়ার
  • ৩ টেবিল চামচ ‏সয়াবিন তেল
  • পরিমাণ মত ‏লবণ

 

প্রস্তুত-প্রনালী:

এই সবজি রান্না করার জন্য সিজনাল যে কোন সবজি নিতে পারেন। এখানে মিষ্টি কুমড়া, পটল, আলু ও বেগুন নিয়েছি। সবজিগুলো ছোট টুকরা করে কেটে ভালভাবে ধুয়ে পানি ঝরিয়ে নিন।

একটি পাত্রে তেল নিয়ে গরম হতে দিন। গরম হয়ে গেলে এর মধ্যে পাচ ফোড়ন, তেজপাতা, এলাচ, দারুচিনি, শুকনো মরিচ ও কাচা মরিচ দিয়ে বাদামি করে ভেজে নিন। খুব বেশি কালচে করে ভাজবেন না। তাহলে তরকারি তেতো হয়ে যাবে। এবার সবজি ও লবণ দিয়ে মিশিয়ে নিন। ঢাকনা বন্ধ করে রান্না করুন ৫-৭ মিনিট। এই পর্যায়ে পানি দেওয়ার প্রয়োজন নেই। সবজি থেকে যা পানি ছাড়বে তাতেই সবজি সেদ্ধ করুন।



৫-৭ মিনিট পর জিরা গুড়া, হলুদ গুড়া ও আদা বাটা দিয়ে ১ মিনিট কষিয়ে নিন। এতে মশলার কাচা গন্ধ চলে যাবে। এবার এতে ৩ কাপ পানি দিয়ে ঢাকনা দিয়ে রান্না করুন। রান্না করতে করতে পানি কিছুটা কমে গেলে চিনি দিয়ে মিশিয়ে নিন।

একটি ছোট বাটিতে কর্ণ ফ্লাওয়ার ও পানি দিয়ে মিশিয়ে নিন। এবার তরকারিতে কর্ণ ফ্লাওয়ার-এর মিশ্রন একটু একটু করে মেশান আর অনবরত নাড়তে থাকুন। কর্ণ ফ্লাওয়ার ভাল করে মেশানো হয়ে গেলে ১ মিনিট মত জ্বাল করে নিলেই তরকারি তৈরি হয়ে যাবে। এবার গরম গরম লুচি বা পরোটার সাথে পরিবেশন করুন।
